3 Yummy Summer Mocktail Recipes

Nothing drives me to drink like a house filled with my dearest relatives. Okay, they’re not all that bad, I actually love some of them (alright, most of them), but since I’ll be traveling to visit them this summer pregnant and totally dry, I will miss having that glass (or two) of wine or champagne. Mocktails can be a delicious alternative! Here are some of my favorite yummy mocktail recipes for those of us abstaining this summer:

Mocktail Recipes:

Mock Champagne

Just like real champagne this drink is not too sweet or too tart.  I serve it with a decorative ice ring to add a little pizzazz.

Ingredients

  • 2 (2 liter) bottles ginger ale, chilled
  • 1 (46 fluid ounce) can pineapple juice, chilled
  • 1 (64 fluid ounce) bottle white grape juice, chilled
  • Fresh fruit or edible flowers

Directions

  1. Decorative ice ring: Fill a ring-shaped cake pan half-way with ginger ale. Freeze until partially frozen. At this point you can place edible flowers or pieces of fruit around the ring. Fill pan with ginger ale and freeze until solid. Place in large punch bowl just before serving.
  2. In the punch bowl, combine 1 bottle ginger ale, pineapple juice and white grape juice.

Rockin’ Strawberry Punch

This one is a big hit with the kiddos too.

Ingredients

  • 1 (12 fluid ounce) can frozen pink lemonade concentrate, thawed, undiluted
  • 2 (10 ounce) packages frozen unsweetened strawberries, partially thawed
  • 1/4 cup sugar
  • 2 cups cold strong brewed tea (I use decaf while I’m pregnant.)
  • 2 liters ginger ale, chilled
  • Ice cubes (I add blueberries or diced strawberries to the ice-cube trays prior to freezing.)

Directions

  1. In a food processor or blender, combine lemonade concentrate, strawberries and sugar. Cover and process until smooth. Transfer to a large pitcher or punch bowl; stir in tea. Add the ginger ale and ice cubes. Serve immediately.

Citrus-Mint Cooler

This one is sure to impress your guests.  (For those guests that aren’t abstaining, I mix in a shot of vodka to their glass as well.)

Ingredients

  • 1 cup fresh lemon juice
  • 1 cup fresh orange juice
  • 2 cups sugar
  • 2 1/2 cups water
  • 10 sprigs mint
  • 32 fluid ounces ginger ale
  • Water

Directions

  1. Place the first five ingredients in a saucepan.  Bring to a boil, stirring until sugar dissolves. Cover and remove from heat and let steep until cool. Strain, and then cover and refrigerate. To serve, fill glasses or a pitcher with equal amounts of fruit juice, ginger ale and water (I eyeball it.). Add ice and serve immediately.
